Vegan Breakfast Burritos To Die For

I'm so depressed that this picture is so bad because this burrito was SOOO good! I so admire Morgan from Little House of Veggies. Pretty much everything that is ever served at her table is incredibly delicious. She doesn't obsess about sugary cupcakes like the Vegan Piggy here, but usually finds a way to make everything with a healthy twist using super creative ingredients. This here was Morgan's recipe for Breakfast Burritos with Potatoes and Bacon. I took the suggestions of a few local vegans and bought some Central Soy Foods (a local brand which is total bonus) Nigari Smoked Tofu. The crispy potatoes and "bacon" mixed with the veggies and smokiness of the tofu made me one happy girl. The only thing I changed was to use mushrooms (because I'm a mushroom addict) instead of carrots. I also had the fortune of having a little leftover guacamole that I made from last night to throw on top. The recipe says it serves 4, but I ended up making 8 smaller burritos. I'll see how they freeze. The only problem with this meal, was the ridiculously enormous mess I made. Despite the kitchen explosion, I will definitely make these again!

Looks like it turned out delicious! I think photographing food can be so hard sometimes too! I wish I had guac for mine, but I was out. Bet it made them even better Im so glad you liked the recipe, and thanks so much for the kind words and links! I appreciate it as always! An btw, I am most definitely obsessed with sugary cupcakes. dead serious!

Sarah, I totally agree! I wouldn't trade a burrito like this for a sausage, egg and cheese burrito ever. And I love that you feel better not worse after eating something like this.

Morgan, I'm still stuck with my cell camera, so everything looks bad no matter how good it was. Your blog doesn't reflect any sugar problem as mine does. And besides, even if you made a cupcake it would be healthy. I still haven't figured how to let go of white flour and sugar yet, but your blog is helping me figure out ways to do just that.

By the way, I'm totally making your chili today! Stop making so many good recipes, so I'll stop being lazy and make a few of my own :)

Isn't it sad when food tastez so good but you just can't capture all it's greatness in a photo! I'm not so sure this applies here though because looking at this photo I'm thinkin' that's one fine looking breakfast burrito. I'll have to give this a try some Sunday. Would make for a nice brunch, no? :)
